- 2 Tbsp. Lemon zest
- 4 Tbsp. Mayo
- 2 Tbsp. Lime juice
- 1 Celeriac
- 2 Avocados
We are going to start this recipe by processing the celeriac. You can do this by peeling it first ansd then grating until it is in small pieces.
Take the avocado and make sure to remove the stone as well as some of the flesh. Add into your bowl along with the celeriac you just worked on.
Throw in the salt, some pepper, the lemon zest, mayo, and lemon juice and blend them all together well.
Now that the ingredients are ready, take the shells of the avocado and stuff them with that vegetable mixture.
Bring out a serving or a baking dish and place the shells of avocado inside. Place these into the fridge and allow them some time to chill before serving.
